Ingredients

Scale

Jalapeno Peppers

  • 1214 large jalapeno peppers (stemmed, seeded and halved)

Cheese Filling

  • 8 oz. cream cheese (softened)
  • 1 cup shredded sharp cheddar cheese
  • ½ cup shredded monterey jack cheese (+ more for topping)

Seasoning & Extras

  • 1 ½2 teaspoons cajun or creole seasoning (add more if you like it spicy)
  • 8 slices bacon (optional), cooked and chopped

Instructions

  1. Preheat Oven: Preheat the oven to 400˚F and position the oven rack in the middle to ensure even cooking.
  2. Prepare Baking Sheet: Line a half sheet baking pan with foil and lightly grease it with nonstick cooking spray to prevent sticking.
  3. Prep Jalapenos: Slice the jalapeno peppers in half lengthwise. Use a spoon to carefully remove the seeds and membrane, scooping upwards to create hollow halves for stuffing.
  4. Make Cheese Filling: In a large bowl, combine softened cream cheese, shredded sharp cheddar, shredded monterey jack, cajun or creole seasoning, and chopped bacon if using. Stir or beat until the mixture is creamy and well blended.
  5. Fill Jalapenos: Spoon the cheese mixture into each jalapeno half, filling them generously. Arrange the filled peppers on the prepared baking sheet.
  6. Add Topping: Sprinkle about 1 teaspoon of extra shredded monterey jack cheese on top of each filled jalapeno for a cheesy crust.
  7. Bake: Bake in the preheated oven for 20 to 25 minutes, until the cheese is bubbly and golden on top.
  8. Optional Broil: If desired, broil the poppers for 1 to 2 minutes to achieve a deeper golden brown crust, watching carefully to prevent burning.
  9. Cool and Serve: Allow the poppers to cool for a couple of minutes before serving to avoid burning and to let the flavors meld.

Notes

  • You can adjust the amount of cajun or creole seasoning to control the spice level.
  • Bacon adds a savory flavor but can be omitted for a vegetarian option.
  • Use gloves when handling jalapenos to avoid skin irritation from the capsaicin.
  • Broiling is optional and should be monitored closely to prevent burning.
  • These poppers are best served warm for maximum flavor and texture.
