Ingredients

Scale

Noodles

  • 12 ounces thin spaghetti (340g; can also use dried Chinese noodles or fresh egg noodles)
  • Salt, for boiling water

Sauce

  • 4 tablespoons unsalted butter
  • 8 cloves garlic, peeled and thinly sliced
  • 1/8 teaspoon turmeric (optional)
  • 1 tablespoon oyster sauce (or vegetarian oyster sauce)
  • 1 tablespoon soy sauce
  • 12 teaspoons brown sugar, depending on taste
  • 1 teaspoon sesame oil

Garnish

  • 12 whole scallions, chopped
  • 1/4 cup Parmesan cheese

Instructions

  1. Cook the noodles: Bring a large pot of salted water to a boil. Cook the noodles or pasta according to package instructions until al dente. If using fresh noodles, blanch them briefly. Reserve some of the pasta cooking water before draining.
  2. Prepare the sauce: While the noodles cook, heat butter in a large skillet over medium heat. Add the thinly sliced garlic and cook for about 5 minutes until it softens and becomes lightly caramelized, stirring occasionally to avoid burning.
  3. Add flavorings: Stir in the turmeric (if using), oyster sauce, soy sauce, brown sugar, and sesame oil. Cook and stir this mixture for 1 minute to allow the flavors to combine.
  4. Incorporate scallions: Add the chopped scallions to the skillet and cook for an additional 30 seconds until they wilt slightly.
  5. Toss noodles and cheese: Add the cooked noodles to the skillet along with the Parmesan cheese. Toss everything together to coat the noodles evenly with the sauce and cheese. If the sauce seems thick, add a few tablespoons of the reserved pasta cooking water to loosen and achieve desired consistency.
  6. Serve immediately: Transfer the noodles to plates and enjoy this savory, aromatic Asian garlic noodle dish while warm.

Notes

  • You can substitute the thin spaghetti with dried Chinese egg noodles or fresh egg noodles as preferred.
  • Turmeric is optional and adds a mild color and subtle earthiness, but can be omitted without affecting flavor significantly.
  • Adjust brown sugar quantity to balance the savory oyster and soy sauce to your preferred taste level.
  • Reserve pasta water is key to adjusting sauce consistency, so don’t discard all of it after draining.
  • For a vegetarian version, use vegetarian oyster sauce or mushroom sauce instead of regular oyster sauce.
