Instructions

  1. Season the chicken: Generously season both sides of the chicken breasts with salt and pepper to enhance their natural flavor.
  2. Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear them until golden brown on each side, about 4–5 minutes per side. Remove the chicken from the skillet and set aside.
  3. Sauté aromatics: In the same skillet, add the finely chopped onion and minced garlic. Sauté until fragrant and softened, about 2-3 minutes, making sure to scrape up any browned bits left from the chicken.
  4. Make the glaze: Pour in the apple cider, apple cider vinegar, honey, Dijon mustard, and add the sprig of thyme. Stir everything together and let the mixture simmer gently for about 5 minutes to meld the flavors and slightly reduce.
  5. Cook the chicken in glaze: Return the seared chicken breasts to the skillet. Spoon the glaze over the chicken, cover the skillet, and cook on medium-low heat for 10–12 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Reduce the glaze: Remove the chicken breasts and set them aside. Increase the heat to medium-high and let the glaze simmer uncovered for a few more minutes until it thickens to a syrupy consistency.
