Dry Ingredients
- 250g plain flour, plus extra for dusting
- 50g wholemeal flour
- 1 tsp bicarbonate of soda
- 2 tbsp porridge oats
- ¼ tsp salt
Wet Ingredients
- 225ml buttermilk or natural yogurt
- 1 tsp honey
- 1 tbsp milk (for brushing)
- Mix dry ingredients: In a large bowl, combine the plain flour, wholemeal flour, bicarbonate of soda, and ¼ teaspoon of salt. Use a fork to mix thoroughly ensuring everything is evenly distributed.
- Add wet ingredients: Pour in the buttermilk or natural yogurt along with the honey. Using a butter knife, gently mix the ingredients until they come together to form a soft dough. The dough should be slightly sticky but not wet. If needed, sprinkle a little extra flour to achieve the correct texture.
- Shape the dough: Lightly flour your hands and divide the dough into six equal portions (approximately 80g each). Shape each piece into a rough round and flatten slightly. Use a sharp knife to cut a deep cross on top of each piece. This helps the bread cook evenly and develop a rustic look.
- Add finishing touches: Brush the tops of the dough rounds lightly with milk and sprinkle porridge oats over each to add texture and flavor to the crust.
- Preheat air fryer and cook: Set your air fryer to 180°C (356°F). Line the air fryer basket with baking parchment to prevent sticking. Place the rolls in the basket in batches, making sure they have space to expand, and air fry for 12 to 15 minutes until they turn golden brown and feel firm to the touch.
- Cool and serve: Remove the soda bread rolls from the air fryer and transfer to a wire rack to cool slightly. They are best eaten on the day of cooking but can be stored in an airtight container for up to two days. To refresh, warm them in the air fryer for 2 to 3 minutes before serving.
Notes
- Use buttermilk or natural yogurt for authenticity and tenderness in the bread.
- If you don’t have porridge oats, you can substitute with rolled oats or omit them.
- Make sure to cut the deep cross on top of the dough to help the bread rise and cook evenly.
- Soda bread is best enjoyed fresh but can be briefly warmed to refresh its softness.
- Adjust flour amounts if your dough is too sticky depending on humidity and brand of flour.
